Banana Muffins


I’ve been inundated with bananas recently so I’ve had the good fortune to be in a position to make some very tasty muffins. This recipe has been adapted from 1000 Recipes, Cupcakes and is delicious.


5 very ripe bananas
4oz soft light brown sugar
2 large eggs
½ cup sunflower oil
8oz plain flour
1tsp bicarbonate of soda

Pre-heat the oven to 200ºc (180ºc fan).
In a bowl mash the bananas with a fork
Add the sugar, eggs, and oil then whisk together until combined.
Sift together the flour and bicarbonate of soda, fold into the wet mixture until just combined.
Divide equally into a muffin tray lined with paper cases and bake for 10 – 15 minutes until a wooden tooth pick comes out clean.
Remove from the oven and leave as long as you can to cool before devouring them.

I made 12 from this mix and typed the ingredients into the my fitness pal app, below is a breakdown of how the nutritional looks which should only be used as a guide.

240 calories
10.2g fat
1.3g saturated fat
32g carbohydrates
16.4g of which sugars
3.6g protein
